Ingredients You’ll Need
- 1 pound ground turkey
- 1 small onion, chopped
- 1 large sweet potato, peeled & cubed
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 1 can (15 oz) black beans, drained, rinsed
- 1 can (15 oz) diced tomatoes
- 1 cup low sodium chicken broth
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- ½ tsp cinnamon
- salt and pepper to taste
- 1 tbsp olive oil
How to Make It
- Heat olive oil in a large pot over medium heat. Add onion, bell pepper, and garlic. Saute for 3-4 minutes.
- Add ground turkey, breaking it up, and cook until browned.
- Stir in spices, coating the meat and veggies.
- Add sweet potato, beans, tomatoes, and broth. Bring to a boil.
- Reduce heat, cover, and simmer 25-30 minutes (until sweet potatoes are tender).
- Serve hot with toppings!
